Date Brownie Bites

Date brownie bites are small, bite-sized brownies that are made with dates as a main ingredient. A great gluten-free and vegan recipe.

Dates are a great source of iron, potassium, and B-vitamins, with anti-inflammatory and anti-tumour effects.  Dates are low-glycemic and a safe sweetener for diabetics. If pregnant or plan to become pregnant, eating 6 dates a day may help to improve your labour experience.

The are also known to improving digestion; reducing labor pain; improving anaemia; and supporting maternal and fetal health: Dates are also rich in antioxidants and other essential nutrients, such as calcium, magnesium and potassium, which support maternal and fetal health.


Ingredients

  • 3/4 cup Medjool dates , pitted (6 ounces)

  • 1/4 cup water

  • 1/2 cup almond butter (or nut butter of choice e.g cashew)

  • 1 tablespoon ground flax seeds

  • 5 tablespoons cacao powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • 1 teaspoon balsamic vinegar

  • Pinch of salt

  • Preheat the oven to 350ºF/177C/Gas Mark 4, and grease a mini muffin tin with oil of choice to help prevent sticking. 

  • In a food processor, combine the dates and water and process until the dates have broken down into a paste (They may turn into a ball in the processor, this is fine!)

  • Add in the almond butter (or butter of choice), ground flax, cacao powder, baking soda, vanilla, and vinegar and process again until a sticky, uniform dough is created

    • Add 1 more tablespoon of water to help it blend smoothly, as the batter will be thick and sticky.

  • Use a cookie scooper to scoop the dough into the greased mini muffin tin.

    • Roughly using 1 tablespoon of dough per slot

  • Gently flatten each mound of dough with fingers

  • Bake for 12 - 15 minutes, until the tops look dry,

    • The centres will still feel slightly soft to the touch

  • Remove from the oven and let the brownies cool for 30 minutes

    • They firm up as they cool, but are very fragile when warm.

  • Use a knife around the edge of each brownie to help remove them. They can be stored in the fridge in an airtight container for up to 2 weeks.
